Orappies!
For lack of a better name, I'm calling these "orappies"! They're the orange and poppy-seed cookies I made the other night, and here's the recipie, with my modifications.INGREDIENTS:
- 3 eggs, room temperature
- 3/4 cup white sugar
- 4 teaspoons shaved orange rinds
- 3/4 cup vegetable oil
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup poppy seed
DIRECTIONS: - Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, whip eggs and sugar until light. Mix in the orange extract and oil. Combine the flour and baking powder; stir into the egg mixture along with the poppy seeds. Form dough into 4 logs and place them 3 inches apart onto an ungreased cookie sheet; flatten slightly.
- Bake in the preheated oven for 20 to 25 minutes, or until golden and firm to the touch. Remove from the oven and cool completely. Remove to a cutting board and slice each log into 1/4 inch wide diagonal slices with a serrated knife. Return the slices to the baking sheet, cut side down.
- Return the slices to the oven and bake for an additional 5 to 10 minutes, until toasted.
Now, the key trick that really pulls this together is the glaze I made. And unlike the last recipie, this is all me!
INGREDIENTS:
- 1/2 cup of milk
- 2 teaspoons of vanilla
- 4 teaspoons of orange rinds
- 3 cups of powdered sugar
DIRECTIONS:
- In a medium bowl, pour in milk and 1/2 cup of sugar. Stir. Continue adding sugar and stirring, while adding vanilla and orange rinds. Consistency should be "gooey".
- Once it reaches the right consistency, pour over the cooled orappies. Cookies should be coated as completely as possible and then covered. Glaze may still be somewhat runny.
- Refrigerate over night and serve. Glaze should be hardened by now.
